Simple seafood chowder
A quick and easy seafood soup from back of the pantry ingredients – perfect for when the whānau show up unexpectedly!

Ingredients
2 x 400g cans creamed corn
2 large white potatoes, diced
2 cups water
1 onion
1 400g can condensed milk
1 x 310g can smoked fish fillets*
2 tbsp margarine
Salt and pepper to taste
Method
Chop the onion into cubes and fry lightly in the bottom of a large saucepan, in the margarine.
Add the water, corn and diced potatoes and bring to the boil. Simmer for 15 minutes until potatoes are tender.
Stir in the condensed milk and tinned fish fillets, add salt and pepper to taste. Simmer for a few minutes and then serve.
*You could also use tinned mussels or crab meat, smoked kippers or oysters, or even tinned pink salmon depending on what you prefer. The soup can also be served without fish as well.
